(She takes after her father that way, but of course I know that you all know that already, LOL)

One goofy slide show!

MMmmmm Pumpkin Muffins....

My customer Debbie, (who makes me a huge fabulous tin of almost too beautiful to eat Christmas cookies) brought me this recipe for these yummy muffins. Not only did she bring the recipe, but she baked some for samples, AND brought me the jar of dry ingredients and can of pumpkin needed to make my own!!! How NICE!!!!
So tonight to take the snowy chill out of the house I turned on my oven and made them!!!
YUMMMMmmmmYYYyyy!!! Only I added dried cranberries instead or raisins or currents (it is what I had in the house). Just look at all those cranberries!
So here is the details:
  • 1 c quick oats
  • 1 c buttermilk (mix w/oats and let sit 1 hr)
  • 1/2 c white flour
  • 1/2 c whole wheat flour
  • 1/2 tsp salt
  • 1 tsp baking powder
  • 1 1/2 tsp baking soda
  • 1 tsp cinnamon
  • 1 tsp pumpkin spice
  • 1 egg
  • 1/4 c brown sugar
  • 1/4 c canola oil
  • 1/4 c molasses (I didn't have any)
  • 1 tsp vanilla
  • 1 can (15oz) pumpkin

Mix everything together, dry ingredients first then wet, then pumpkin.

Line muffin tin with papers and spray with Pam.

Bake 15 - 20 minutes @ 400 Makes 12 muffins

I must have used too many cranberries cuz I got 18 huge wompers!!!

Pumpkin Cookies

1 cup shortening
1 cups sugar
1 cup pumpkin
1 egg
2 cups flour, sifted
1 tsp. baking soda
1 tsp. cinnamon
1/2 tsp. salt
1 cup raisins or nuts (optional)

1) Cream shortening, sugar, and pumpkin
2) Add egg and mix well
3) Add dry ingredients & raisins or nuts. Mix well.
4) Drop by spoonfuls onto cookie sheet
5) Bake in preheated 375 degree oven for 12 minutes


These are real simple cookies. Delicious (if you like pumpkin) with tea or coffee So easy to make. ENJOY and HAPPY THANKSGIVING!

RE: ornaments

JULES, those ornaments are just beautious! I really like the little red mittens, because of all the kool glitter on them. Of course you cannot forget the snowmen. I can not believe how talented you are. You must get that from your Mother!!!

From Chrissy's Kitchen...

Lasagna

1 lb. of sliced vegetables (yellow and green zucchini sliced thin)
sliced onion or onion powder to taste ( I use powder)
1 cup of each celery and carrots (sliced small) and one clove garlic
14 oz. of lasagna noodles
2 beaten eggs
2 cups small curd cottage cheese
1/2 cups fresh Parmesan cheese
2 TBSP. parsley
28 oz. can tomatoes
6 oz can tom. paste
16 oz. mozzarella cheese
1 tsp. sugar
1 tsp. oregano
1/2 tsp fennel seed

In skillet - saute the celery, carrots, zucchini and garlic in olive oil until softened. Stir in undrained tomatoes, t. paste, sugar, oregano, fennel seed (optional), 1 tsp. salt, 1/4 tsp. pepper. Bring mixture to a boil, Reduce heat and cover. Simmer 20 minutes stirring occasionally.

Meanwhile, cook lasagna noodles according to directions. Drain and rinse with cold water.

Combine eggs, c. cheese, shredded mozzarella cheese, Parmesan cheese, parsley and 1/4 tsp. pepper.

Grease 13 x 9 pan. Layer lasagna noodles on bottom of pan, next spread with cottage cheese mixture, next veggie sauce mixture. Repeat so there are two layers of each. You can add more mozz. cheese on top but wait until lasagna is half cooked so it does not burn but is just bubbly and slightly brown.

Bake 40 minutes at 375 degrees. Let stand 10 -15 minutes.

ENJOY!

you can substitute for other veggies like broccoli.
